A Restaurant with a Mission: Excerpt from ‘BAM Global Movement’

“Through working in my business, I’m experiencing more of God,” says Faouzi Chihabi. “I have my faith in my head and heart, but now it’s also flowing through my hands.” Faouzi studied theology to become a minister, and then worked on issues concerning vulnerable youth for both the Dutch and European governments. Presently, he owns the trattoria Borgo d’Aneto. On the riverside in Rotterdam, his former work experience and his faith merge in this restaurant-with-a-mission.

The latte macchiato is poured carefully. The Italian bun is crisp; not too soft and not too hard. The plate nicely decorated with fresh vegetables. Faouzi trains his crew to keep an eye on the customer. In every area of this restaurant, they pursue a high-quality standard.

Borgo d’Aneto is an approved apprenticeship for youth “at risk” who attend special schools offering vocational training. Faouzi reacts strongly to the assumption that it is an extra challenge to maintain high quality with these young people working in his restaurant. “These boys and girls might have a low IQ, but it’s the biggest misconception that they are not socially adept. They are actually very sensitive and intuitive.” He sees them flourish in his restaurant, although sometimes a meal ends up in the trash. “As a business we cannot afford to put something on the table that doesn’t meet a good standard. When a plate is thrown in the trash, these youngsters might feel they themselves landed there, but they learn through failure to continue, despite a setback. They realize their contribution matters, and that realization causes growth.”  Read more

Dishing It Out: A BAM Consultant on How to Get it Right in F&B

Josh consults with BAM companies in the Food and Beverage (F&B) Industry in both the USA and Asia, helping them be more effective in their operations. As part of our hospitality industry series, we asked him to share with us some of his expertise in café and restaurant management.

You are obviously very passionate about the culinary arts, why is that and what does it have to do with business as mission?

I am very passionate about the power of food. When you prepare food for people there is always the potential to create moments that people might remember forever. Flavours play a big part in both memory making and memory retrieving. Special occasions are often connected to food and flavours can pull on the emotions. Food has the power to be an icebreaker, a community builder, even a context for enemies to sit down at a table together. Those involved in food preparation and service have the power of food at their fingertips – not to mention people’s lives in their hands when it comes to matters of food safety and hygiene!

To me, for all these reasons and others, the restaurant industry is so important in the missions community. Serving food and beverages meets people’s needs and has the potential to create special memories. Food breaks down barriers and gives you access to people that you would never otherwise be able to meet. So many times in the Bible Jesus was eating and drinking with the people that he was trying to minister to. We can also minister in the context of a meal, or when we are preparing that meal. The kitchen can be a place of high pressure, and there is a great camaraderie. People will see who you really are when you are under pressure to deliver great dishes and great service. What one piece of advice would you give to someone starting out in BAM and wanting to run a hospitality business? 

The barrier of entry to this industry is quite low and hence not very difficult to set up, however keeping it running profitably is a real challenge. Many mission-minded Christians may first consider a non-profit model which in many cases will fail eventually due to financial difficulty. If anyone is seriously considering running a hospitality business as BAM, the dedication to the business and its excellence are vital to success and longevity. Great products and services are keys to maintain brand loyalty and by themselves are great testimonies and tools of evangelism. By winning the pre-believers’ stomachs, that’s already a big step closer to winning their hearts for Christ! If you have a big passion for people, then you’ve got to have a big passion for this industry as well, because you need to invest a lot of care and love into the products and your team. I would ask, “Is this really something you are passionate about?” Often people think of starting a cafe because it’s a familiar kind of business or they enjoy cooking. However, they may not consider what a full time job it is running a hospitality business. It’s not a 9 to 5 kind of business, you will work evenings and weekends, and always holidays! If you love to cook and serve people and you get satisfaction from working hard doing that, then you will be energised by it and running the business will give you life. However, if it doesn’t give you life, if you aren’t passionate about it, it’s not a good idea to start. Along with that, staff your weaknesses. What are the advantages of being in the hospitality industry when it comes to doing BAM?

The hospitality industry is a great option when it comes to doing BAM, especially when food is involved. Having a meal is an essential human need, and so is shelter. As a service provider, you meet those basic needs and provide a common space for people to gather in a very non-threatening way – especially helpful in gospel-sensitive countries. Jesus’ first miracle was performed at a wedding when he turned water to wine, he also fed thousands with five loaves and two fish, he ate at Zacchaeus’ and Matthew’s houses, and the Bible gives us an account of his last supper with his disciples, as well as many other examples of having meals together.
